Peppermint Ice Cream

I love peppermint ice cream. I find it calming during the crazy holiday season!

Alright! I am back on track! I am just about done writing up my posts about my travels! And I spent nearly all of my weekend in the kitchen! Between cooking demos and making my last ditch effort to make all the ice cream I set out to this year, it was one. busy. weekend. 

I know it might seem crazy, but yes, all the posts in the next two weeks are going to be ice cream. HORRID timing right? As the blizzards are setting in across America, who really wants ice cream? Frankly I'm about to write off anything that involves walking outside! This week I need to visit the holiday market, and go to National Harbor for their holiday festivities...both outdoors. If you want to find me while I'm at either I'll be the one that looks like the Michelin Man. I'm think it'll take at least five layers to be okay in any of this. It's not so bad except the wind. Oh the wind. I can't take it. 

Ugh. As it is I need to get to work on sending out holiday cards. Hundreds of them. Hundreds. Literally my entire day will be spent hand addressing envelopes. At least I can watch holiday movies! And eat Peppermint Ice Cream! ....oooooh cold. I'll just have to sip hot chocolate at I eat my ice cream! 

So, if you want to have chocolate wafers and make the ice cream into a sandwich like I did...I would NOT recommend doing it the way I did. I thought it would be fun to use the tree silicone pans my mother gave me in her Christmas Countdown (which is just SO cute!). Bad idea. Bad. I melted down chocolate chips and poured them into the molds.....chocolate does not want to come out of silicone molds. Yep. Good learning moment. Took some effort. My new plan would be to melt down the chocolate and go at it like I would the chocolate collars. That would work out so much better....I think. Haven't tried it, but I can't see how it could fail. Peppermint Ice Cream 

2 eggs
3/4 cup sugar
1 tsp. vanilla
2 cups cream
1 cup milk
pinch of salt
1 cup peppermint candies

Using a food processor, grind the peppermint candies into a fine powder. 

In a stand mixer combine the eggs and sugar.  Beat for one minute until light and fluffy. 

Gently mix in the cream, milk, vanilla, salt  and powdered peppermint candies. 

Transfer the mixture to an ice cream maker. Allow the ice cream to churn until finished and freeze according to the manufacturer’s instructions.

  1. Mmmmm I LOVE peppermint ice cream!! I don't care if it's old outside, I'm digging into ice cream if it looks that delicious. I love how cute they are, even if you did have trouble getting the chocolate to come out. You would have never of known!

  3. Peppermint ice cream is always around our house during the holdays. It's so good with fudge sauce or dumped into hot chocolate.

    Did you try spraying the moulds first? I'm not an experienced baker, so I'm not sure if that would work or not.

  6. I'm glad more people are eating ice cream in the winter time. We went out in -25 C weather to get Blizzards the other day. Now I don't feel so silly. I am loving those adorable ice cream sandwiches and peppermint ice cream is one of my favourites!

  8. I have to agree with Chef Dennis, literally everything you make is so beautiful, and i'm sure it all tastes amazing. I hope to have that skill one day!
    Despite all the horrid weather, I still am interested in learning to make ice cream. Do you have any good tips on how to do it with out an ice cream maker? Or should I just wait until I can get one before attempting such a task?

  9. it is possible to make ice cream without an ice cream maker...it's just not as simple, and takes a lot more time.

    first tip would be to make a custard ice cream....so, take any recipe like i have, scald one cup of the the dairy and then slowly add it to the egg mixutre, and return it to the stove and cook until slightly thickened. then add in the rest of the dairy and the rest of the ingredients. chill the custard in the fridge for a few hours and then pour into a suitable freezing container.

    the reason you want the custard is because it will freeze with less ice crystals. if you want to make a philadelphia style ice cream, omit the eggs. but i don't recommend it. the texture won't be as good.

    next up, every half hour or so, open the container and preferably beat with a whisk or hand mixer, or stir around with a fork. eventually it will more akin to a frozen custard all nice and soft and semi frozen. that's when you can just leave it to freeze until hardened.

  10. It seems to me that i always crave ice cream more in the winter. Weird. I love that you used peppermint candies instead of extract. This recipe looks really easy too. I love making ice cream.

  19. I'm in australia, and it's really hot here! So this is perfect timing for me! Thank you, now I know what to do to get myself motivated to cooking dinners in the heat :) and some of the other ideas are great, I don't have an ice-cream maker, so it's helpful to know how to make this without one!

    half the fun is in the making, I'd rather take my time with it anyway XD
