Now that you've been reminded (and hopefully entered!), time for recipes, and me to calm down. So much happening all at once!
Rosemary Parmesan Crackers
1 1/2 cups finely grated Parmesan
3/4 cup all-purpose flour
1-2 teaspoons crushed rosemary
1/4 cup cold unsalted butter, cut into bits
1 tablespoon plus 2 teaspoons water
a dash of kosher salt
Combine all ingredients into a food processor. Pulse until it forms a coarse meal.
On a work surface, knead the dough until it is just combined. Form into a log about one inch in diameter. Chill the dough, wrapped in the wax paper, for 1 hour, or until it is firm enough to slice.
Preheat the oven to 375°F. Cut the dough into rather thin slices, arrange the slices 1 inch apart on wax paper. Cover with a second sheet of wax paper. Using a rolling pin, roll each piece until very thin.
Carefully move to parchment lined baking sheets, and bake them in batches in the middle of the oven for 6 minutes, or until they are golden around the edges. Remove from heat and allow to cool long enough to be flipped over carefully.
Put the trays back in to the oven for another 3-4 minutes. Allow to cool slightly. Transfer the crackers carefully with a spatula to a rack, let them cool fully, and sprinkle them with additional rosemary.
Congratulations on finding a house! What an exciting (and stressful) time! I love parmesan and thyme but I bet parmesan and rosemary would be even better! Can't wait to try these :)

ReplyDeleteThis recipe is lovely. Congrats on the house. That's so fab! We bought our first place about 4 years ago. We bought my childhood home after my dad passed. We renovated the whole upstairs and changed the landscaping in front and back. If you ever need advice let me know. I love this stuff. I ripped out walls, floors, I actually tiled 1000 square feet of tile and did the shower too. I refinished cupboards. We scraped off an entire house full of popcorn ceilings. It's so much fun, you will get addicted to it fast. So excited for you.

ReplyDeleteMoving is ultra-stressful, but it's utterly worth it in the end... that said, I've been living in my house for almost four years now, and I still break out into hives at the thought of having to move again someday. :)
ReplyDeleteThe only advice I have for you is to pack a special box for your first night/morning, with stuff you'll need right away like an electric kettle, tea and/or coffee, some munchies, plates and cups and cutlery, basic cleaning supplies, toiletries, etc... that way, you don't have to worry about unpacking right when you arrive to find all those essentials.
BTW, have followed you on Twitter and tweeted an entry. No clue if Canadians are eligible for the giveaway, but I do hope we are!
I love those pinterest color palletes! If your "break neck" speed is anything like mine when I bought a house, you'll paint every room in an absurdly short time (and then again in two years) and have few remaining clothes without paint smudges. I never did learn, ten years and twenty shades later...Good luck with everything!
